     Chicken Marsala

Ingredients
1 lb boneless chicken breast
1 Cup Italian seasoned breadcrumbs
1 egg, beaten
3 Tbl. butter
1/2 large onion
1 Tbl. parsley
fresh mushrooms
1 Cup Marsala Cooking wine or Marsala wine
1/2 Cup water
 
1 clove garlic, minced
Vegetable oil
Cooking spray

Instructions
Pound chicken down a little if too thick, and cut into manageable pieces. Dip into beaten egg, then into bread crumbs. Fry quickly in vegetable oil until browned and drain on paper towel.
In saucepan, melt butter and mushrooms. Cook over low heat for 5 minutes until slightly softened. Add parsley, marsala wine, water and garlic. Pour mixture over chicken.
Cover tightly with foil and bake at 350 deg. for 1 hours. Serve with sauce and mushrooms on top.
This is good enough for company!
