     Split Pea Soup

Ingredients
1 lb. (about 2 1/4 C.) dried, Green Split Peas, rinsed and picked over
6 C. Chicken or Vegetable Stock
2 Tbsp. Butter
1/2 tsp. Salt
1 med. Onion, chopped
1 Celery Stalk, chopped with leaves
1 clove Garlic, minced
2 med. Carrots, chopped
1 med. unpeeled Potato, cubed
 
1 C. diced Ham or Turkey Sausage cooked (optional)

Instructions
Combine all ingredients except ham in a heavy 6 qt. covered saucepan. Bring to a boil, then reduce heat and simmer 2 1/2 hours. A slow cooker may be used on low, 6-8 hours. Stir occasionally. Meat can be added the last 5 min. to heat thoroughly.
