     Apple Cranberry Coconut Crisp

Ingredients
4 C. sliced, peeled Apples
2 C. Cranberries, thawed if frozen
1/2 C. Granulated Sugar
1 Tbsp. Cornstarch
1/2 tsp. Ground Cinnamon
2 Tbsp. Lemon Juice
Coconut Topping-
1/2 C. Brown Sugar
 
1/2 C. Rolled Oats
1/4 C. Sweetened Coconut
1/4 C. Butter

Instructions
In a bowl, combine apples, cranberries, sugar, cornstarch, cinnamon, and lemon juice. Mix well and transfer to lightly greased crock pot.
To make coconut topping- in a separate bowl, combine brown sugar, rolled oats, coconut and butter. Using 2 forks or your fingers, combine until crumbly. Spread over apple mixture.
Cover and cook on High for 3-4 hours, until crisp is hot and bubbly. Serve with whipped cream or ice cream.
