     Spudnut Doughnuts

Ingredients
2 C. Scalded Milk
3 Eggs
1 tsp. Cinnamon
2 pkgs. Yeast
1/2 C. Warm Water
1/2 C. Shortening
1 C. Mashed Potatoes
1 tsp. Nutmeg
1/2 C. Sugar
 
2 tsp. Salt
7-8 C. Flour
Glaze-
2 C. sugar
1 C. Milk
Vanilla to taste

Instructions
Dissolve yeast in warm water. Scald milk, add shortening, sugar, eggs, potatoes, salt and seasonings. Add yeast. Add flour to make soft dough let raise once- to double in size. Cut out, fry, dip in glaze, or sprinkle with sugar.
Glaze- Boil to a boil sugar and milk. Simmer and add vanilla to taste.
