     Honey Cheese Bacon Chicken

Ingredients
4 skinless, boneless chicken breast halves
3/4 c honey
1/2 c Dijon or creole mustard
1/4 t lemon pepper or more to taste
4 slices bacon, cut in half
1 c shredded mozzarella or provolone cheese
 

Instructions
Heat oven to 375- apply cooking spray to baking dish- pound chicken breast to even thickness mix together honey and mustard and lemon pepper in a small bowl. place breast halves in baking dish and drizzle evenly with the honey mustard mixture. Bake the chicken 25 minutes and then top each breast with 2 bacon slices and increase oven to 400 continue baking about 7-8 minutes. Top with cheese and bake another 3 minutes or until the chicken juice runs clear. bacon is crisp and cheese is bubbly, serve with brown or white rice
