     Apple Butter

Ingredients
5 Pounds apples
1 cup cider vinegar
1 cup apple juice
1 1/2 cups dark brown sugar lightly packed
2 T maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
pinch salt
 

Instructions
Wash apples. If you do not have a food mill peel and core apples. I have a food mill so just quarter apples and cook in a pot with the apple juice and the vinegar. Cover with lid. Could use a slow cooker as well. When cooked run them through a food mill to take out seeds and skins and make a consistent puree. If you cooked without skins and seeds then just run through a strainer or a food processor to get a consistently smooth puree. Add in sugar maple syrup and spices. Cook stirring often till it darkens in colour and mounds on a spoon . So you could put it all back into the slow cooker and let it boil it down with out too much fear of burning.
I doubled the spices the first time. Will cut back to 1 and a half next time. I like it but Bill thinks the spices are a little strong.
