     Zucchini, Garlic and Leek Pasta

  White Wine - same as you use in sauce

Olive oil
2 leeks. White and light green part
Garlic scales or cloves 1-2
1 large zucchini
1/2 tsp red pepper flakes
1 tsp dried oregano
1/4 tsp salt
1/2 tbsp lemon zest - juice of 1 lemon
1/2 cup white wine of choice
1/2 cup plain unsweetened almond milk or regular milk
2 cups vegetable broth
Fresh basil
Whole wheat pasta

Sauté leeks and garlic in olive oil. Add zucchini and sauté 1-2 minutes. Add red pepper, oregano, lemon zest and juice.
Deglaze pan with white wine. Finally add vegetable broth and milk.
Cook pasta until al dente. Toss with sauce. Or put in bowls and top with sauce. Garnish with fresh basil.
We also added 1 cup frozen spinach. White wine choice - Chardonnay.
