In large measuring cup or small pitcher combine
tequilla and grapefruit rind and use blunt edge of
wooden spoon or cocktail muddler to muddle the
rind and release essential oils. Allow to sit for
20 minutes.

Rum the rims of 3 highball glasses with lime juice
and dip in a plate coated with lime salt. Set
aside.

|
After grapefruit has infused tequilla, strain
tequilla into a cocktail shaker filled 1/4 way
with ice. Add Elderflower liqueur, grapefruit
juice, and lime juice. Shake vigorously.

|
Add ice cubes to each of glasses to fill 1/3 of
the way. Pour equal amounts of contents of
cocktail shaker through strainer lid into each of
the four glasses. Top with a splash of sparkling
grapefruit soda and garnish with rosemary sprigs.

can sub in gin or vodka for tequilla and sub in lemon juice for lime juice. Garnish with basil or other favorite fresh herbs.
