2 large sweet onions, halved and sliced to very thin moons
2T maple syrup
2 tsp. red wine vinegar
1 tsp. salt
1/4 tsp. pepper
Instructions
In medium sized dutch oven or large sauce pot, cook
bacon over medium-high heat to render out fat,
stirring often. Cook for 10 minutes. Remove bacon
from fat and place on plate to cool. Set aside.
Add sliced onions to rendered bacon fat and
continue to cook over medium high heat, stirring
often, for about 5 minutes, until onions have begun
to soften.
Add salt, pepper, vinegar, and maple syrup. Saute
over medium heat for 15 minutes, stirring at
regular intervals.
Crumble bacon into small pieces and add into
onion mixture. Reduce heat to medium-low and
continue to cook for 15 - 20 minutes, until
reduced and softened. Take off heat and allow to
cool for 10 minutes. Puree in food processor to
smooth consistency.

Suggestions
Can be kept in tightly sealed container in refrigerator for up to a week. Can be frozen.
