     EGGPLANT RAITA

Ingredients
1 16 oz. container plain yogurt
1 16 oz fat free sour cream
5 big fat eggplants
Salt to taste
8 - 10 green chillies chopped
1/3rd cup grated Ginger
3 tblspns Jeera
1/8th spn Hing
1/3 cup oil
 

Instructions
1. Roast eggplants in microwave about 45 mins. and peel. Put pulp in food processor till smooth. Add salt 2. Make vagar with oil, chillies, ginger, cumin and hing. 3. Put the eggplant pulp to the vagar. Chill and serve
Serving Suggestions
Serve with pulao or as a condiment
