     Bacon Wrapped Mini Meatloaf

Ingredients
3 lbs ground beef (at least 93 percent lean)
2 cups shredded cheddar
2 eggs
1/2 cup oatmeal
1 small onion, chopped
1/2 cup lemon juice
1/2 cup chopped green pepper
1 cup water
2 teaspoons salt
 
12 slices of bacon

Instructions
Heat oven to 350 degrees and mix all of the ingredients except for the bacon.
Form the meat mixture into 12 separate mini loaves and place into a shallow baking pan.
Take the bacon and cut each slice in half. Criss-cross 2 slices of bacon over each mini loaf, tucking the excess under the loaf.
Bake the loaves at 350 degrees for 50 minutes.
