2 (15 1/2 ounce) cans white kidney beans drained and rinsed
3 cups can chickn broth
1/2 teaspoon salt
2 teaspoon oregano
1/4 teaspoon pepper
1/2 teaspoon garlic
1 jalapeno, seeded and chopped
1 teaspoon cumin
Instructions
1.Heat oil in pan over medium/high heat. Sprinkle chicken with salt and pepper and cook in pan until brown.
2. Add onion, garlic, and Jalapeno to pan with chicken cook 2 minutes. Sprinkle with oregano and cumin. Continue to cook 1 minute or until chicken no longer pink. Add to crock pot.
In a small bowl mash up 1 cup of beans, add 1/2 cup chicken broth and mix until well blended. Add to crockpot along with remaining beans and broth.
4. Cover and cook on low 3-4 hours.
