     Lemon Mousse

Servings   9 inch springform

Ingredients
6 eggs, separated
3/4 cup sugar
4 1/2 Tbsp. lemon juice
3 tsp. lemon rind
1 1/2 cups whipped cream
 

Instructions
1. Beat yolks until pale and thick; add lemon juice, sugar and rind. Continue beating until double in size
2. Put lemon mixture in a double boiler simmering over water and stir until thick. Cool
3. Beat whites until stiff. Add whites and and whipped cream to lemon mixture
4. Line pan with lady fingers and pour batter into pan. Put in freezer 5. Remove from freezer half hour before serving
