Brown ground beef; add chopped onion & garlic and cook until fragrant.
If using, add in optional ingredients of cumin, essence, red pepper, bay leaf, & oregano.
Add diced tomatoes, 1 can of tomato sauce and chili powder.
If using, add in brown sugar, chocolate, cinnamon & beans.
If mixture seems to dry at this point, add enough of the second can of tomato sauce to make it "right."
Simmer for at least 30 minutes to let the flavors combine and serve.

Shredded cheddar and Fritos scoops! And milk! And somtimes cinnamon rolls. Or also plain saltine type crackers.
