     Carrot Apple Bread

Ingredients
1 large egg
1/2 cup brown sugar, packed
1/3 cup vegetable oil
1/4 cup grnullated sugar
1/4 cup sour cream
2 tsp vanilla
2 tsp cinnamon
1/2 tsp ground nutmeg
1 cup flour
 
1/2 tsp baking powder
1/2 tsp baking soda
pinch salt
3/4 cup grated carrots (approx 1 large or 2 medium)
3/4 cup grated apple (approx 1 apple)

Instructions
1. Preheat oven to 350 degrees. Spray one 9 X 5 inch loaf pan with cooking spray or grease and flour the pan. 2. In a large bowl, add the first eight ingredients (liquids and spices) whisk to combine. 3. Add flour, baking powder, baking soda, salt and stir gently until just combined. 4. Add the carrots and apples and mix. 5. Put batter (it will be thick) into loaf pan 6. Bake for 45-52 minutes or until top is golden, center is set and a toothpick inserted in the center comes out clean or with a few moist crumbs, but no batter.
Tip - Tent the pan with a sheet of foil draped loosely over it at the 35 minute mark if you feel the tops and sides will become too browned before the center cooks through. 7. Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving.
