     BBQ Pork Stuffed Corn Muffins

Ingredients
2 large eggs
2/3 cup milk
2 8.5 oz packages corn muffin mix (JiffyMix)
1 cup shredded pepper jack
2 cups pulled pork in BBQ sauce at room temperature
 

Instructions
Preheat oven to 400. Line 16 muffin cups with paper liners and spray with cooking spray. Whisk together eggs and milk, then stir in muffin mix and 1/2 cup cheese until well combined. Fill muffin cups halfway with batter and divide pork among cups (about 2 TB each). Top with remaining batter and sprinkle with remaining cheese. Bake until golden and springy to the touch, about 20 minutes.
Per muffin- 232 calories, 10.2g fat (3.8g sat fat), 11.5g protein, 22.7g carbs, 2g fiber, 641g sodium
