     Italian Cabbage Soup

Ingredients
4 cups chicken stock
6 oz tomato paste
1 small head cabbage, shredded
15.5 oz great northern beans, drained
4 celery ribs, chopped
2 large carrots, chopped
1 small onion, chopped
2 fresh thyme sprigs
1 bay leaf
 
2 garlic cloves, minced
1/2 tsp salt
Shredded Parmesan (optional)

Instructions
In a 5-6 quart slow cooker, whisk stock and tomato paste until blended. Add remaining ingredients (except parmesan cheese). Cook on low 6-8 hours or until veggies are tender. Remove thyme sprigs and bay leaf.
Per serving- 111 calories, trace fat, 21g carb, 6g fiber, 8g protein
Serving Suggestions
Top with parmesan cheese.
