     Wall Drug Pecan Rolls

Ingredients
1-2 pkgs or Tbsp. yeast
3-1/2 c. warm water
1 tsp sugar
2/3 c sugar
1/2 c shortening (or oil)
2 c flour
1/2 c dry milk
1 Tbsp salt
2 eggs
 
6-7 c flour

Instructions
First combine the yeast, warm water and sugar. Let bubble for 15 mn.
Add 2/3 c sugar, shortening (or oil), 2 c flour and dry milk. Beat well and let rest 10 mn before you add 1 Tbsp salt and 2 eggs. Add 6-7 c. flour as needed. Knead and let rise. Punch down and divide in half and let rest 10 mn.
Roll out to 1/2 inch thick. Spread with butter, cinnamon and sugar. Roll it and cut into 12 pinwheels slices. Spread them in two 9 x 12 in pans. (If you want caramel rolls.. Heat 2 c brown sugar, 1 c margarine and 1/2 c white Karo syrup.) This would go in the 9 x 12 in pan first, with the cut rolls lying on top.
Let rise in warm place for 30 minutes. Bake at 375 degrees about 20 minutes or until rolls are lightly browned. Invert pans with caramel topping over sheets of aluminum foil.
