     Pumpkin Soup

Ingredients
1/3 cup butter
1 onion, diced
2 leeks, washed and diced
2 lbs. pumpkin puree
2 1/2 quarts chicken broth (32 oz box)
1 teaspoon kosher salt
2 teaspoons curry powder
1 teaspoon nutmeg
1 teaspoon white pepper
 
1 teaspoon ginger
1 bay leaf
2 cups light cream

Instructions
Saute onion and leeks in butter over medium heat. Add remaining ingredients except cream and bring to a boil. Reduce heat to a simmer and continue cooking 15 minutes.
Puree soup and strain. Return to heat and add cream.
