First combine rolled oats, chia seeds, coconut, and baking powder in a high speed blender and blend until you have a fine flour. Pour the flour mixture into a separate bowl. Now blend the bananas, water, and maple syrup. Once blended, add in the flour mixture and blend the two together. Pour into parchment lined muffin pans and bake for 25-35 minutes at 375. Eat while warm and gooey.
Recipe, makes 6 muffins. • 2 ripe bananas • 2 cups oats • 1 tbsp chia seeds • 2 tbsp shredded coconut (unsweetened) • 2/3 cup water • 4 tbsp maple syrup • 2 teaspoons baking powder • Extra banana slices for top (optional
