     Thanksgiving Brussels Sprouts

Ingredients
1.5 lbs of halved Brussel sprouts
3tbls extra virgin olive oil
Salt and Pepper
8oz slab bacon cut into lardoons
1/2 cup walnuts coarsely chopped
2 sliced shallots
2 cloves sliced garlic
2tbls red wine vinegar
1 tbls honey
 
1 tbls grainy mustard

Instructions
Toss the halved Brussel sprouts in 2 tbls oil olive and season with salt and pepper. Spread on rimmed baking sheet and roast for 30-40 minutes at 450.
Meanwhile add bacon to medium sauté pan and render over medium heat for one to two minutes. Add a tbls of olive oil and add walnuts, garlic, shallots and a pinch of salt. Cook until the bacon is crispy, but be careful not to burn the walnuts. Mix vinegar, honey and mustard together. Whisk into the bacon fat until emulsified.
Put the sprouts in a large bowl and mix in the bacon mixture. Toss well and enjoy! We always serve at thanksgiving
