     Pecan Drop Cookie

Ingredients
2/3 c egg whites
1 tsp cream of tartar
1-3/4 c firmly packed brown sugar
1/8 tsp salt
3 Tbsp vanilla
2-1/4 c chopped pecans
 

Instructions
Preheat oven to 350 °. Grease cookie sheet or line cookie pan with parchment and set aside. Place egg whites and cream of tartar in small bowl of mixer. Beat at high speed. Slowly add brown sugar, salt and vanilla. Continue beating 3-5 mn or until egg whites stiffen and soft, glossy peaks form.
Fold in pecans. Drop cookie dough in tsp-size mounds onto prepared cookie pans.
Bake for 10-15 mn. Cool cookies before removing from pan.
