Spicy Orange Tea...Crush 2-1/2 Tbsp whole cloves and 5 cinnamon sticks (2 in. long) until partly broken. Mix with 1/4 c orange pekoe tea blend, 4 Tbsp each dried orange peel and finely chopped candied ginger, 1 tsp ground nutmeg.
For Orange Tea use 1 tsp tea per serving, adding 6 ounces boiling water for each, steep 7-10 mn. Serve with sugar and orange wedges to squeeze in.
Cool mint tea...1/4 pound Darjeeling or orange pekoe tea blend and 3/4 ounce (1/4 c) peppermint or spearmint tea. Brew as above, serve with sugar only.
