     Vegetable Marinade

Ingredients
1 c water
1/4 c vinegar
Juice of 1 lemon
6 Tbsp oil
1 Tbsp sugar
Salt to taste
1 garlic clove, split
4 sprigs parsley
3 branches thyme
 

Instructions
Put all ingredients into saucepan and bring to a boil. Simmer 10 minutes. Add desired vegetables and bring to a boil. Cover and simmer until vegetables vegetables are tender. Remove vegetables to separate dishes with a slotted spoon. Strain marinade and pour over vegetables. Let cool and serve at room temperature, wither separately as a sald or as part of a large vegetable platter.
