Ingredients
2 (15 oz.) cans white northern beans, rinsed and drained
2 heads white/green endive, cores removed and thinly chopped
1 c parsnips or white carrots, peeled and grated
1/2 c dried cranberries, chopped
1/4 c fennel fronds
2T olive oil, walnut oil or almond oil
1T shallot, finely minced
2T orange juice
2T pomegranate vinegar
2T maple syrup
2 tsp. Rubbed Sage
2T Candied Orange Peel Strips, finely chopped
2 tsp. salt
1 tsp. pepper
2 large, firm pears (such as Bosc), cored, and sliced to 24 slices and tossed in orange juice
1/4 c toasted pine nuts for garnish
Shaved parmesan for garnish (optional)
Instructions
In medium mixing bowl, combine beans, endive, parsnips/carrots,
cranberries and fennel fronds.
In container with tight fitting lid, combine orange juice, pomegranate
vinegar, olive oil, shallot, maple syrup, sage, candied orange, salt
and pepper. Shake vigorously to form vinaigrette.
Pour vinaigrette over salad mixture and toss well to evenly coat.
Place 4 pear slices fanned out onto serving plates. Evenly distribute
bean salad onto six plates. Garnish with toasted pine nuts. Add shaved
parmesan if desired.
