     Beans, Navy Beans With Ham and Mushrooms

Ingredients
1 lb navy beans, soaked overnight
1 1/2 lbs ham steak, cubed See NOTE
1/2 large yellow onion, diced, divided into 2 portions
1 large red potato cubed with skin on
1 red bell pepper, seeded
2 stalks celery
2 whole carrots
2 TBS Olive Oil
2 TBS Chicken Rub - see recipe on Desktop Cookbook
 
8 Sprigs Fresh Parsley
8 cups water
1/2 lb crimini mushrooms, sliced

Instructions
In a food processor puree 1/2 onions, celery, carrots, bell pepper and potato. In a large stockpot add olive oil, remainder of onions and ham, cook 5-7 minutes over medium heat. Add all remaining indgredients, simmer 2-3 hours or more until beans are tender.
NOTE- variation, use 4 pieces bacon and 1 lb lean pork, cubed raw and simmered in vegetable stock salt and pepper one hour to beginning of recipe
