Melt 3 oz of chocolate with 3/4 c butter. Cool. Add beaten eggs and flour, salt, sugar and vanilla. Bake in a 9 x 13 inch pan at 350° oven for 20 minutes. Cool.
Combine the 3 Tbsp butter, confectioners sugar, 1-1/2 Tbsp milk and the peppermint extract. Spread over cooled crust. Color with red or green food coloring before spreading, if desired. Refrigerate 1 hour.
Melt the 2 Tbsp butter and 2 oz chocolate and pour over the colored part.
