     Sausage and egg casserole

Ingredients
1 lb. sausage - I use apple-chicken sausage or Italian
1/2 onion diced
2-3 handfuls uncooked baby spinach
1-2 handfuls small red or golden sweet tomatoes cut in half
2 handfuls shredded cheese of choice
Half a loaf day old french bread cut into cubes
4oz or so goat cheese crumbled
10 eggs
1.5-2 cups milk, cream, or half and half. Some kind of liquid dairy.
 
Salt and pepper to taste

Instructions
Preheat oven to 350 Sauté onion over medium heat with oil or broth until clear. Dice pre-cooked sausage and heat with onions OR cooked the.uncooked sausage.
Lay bread cubes in the bottom of a 9 X 13 pan. Add the cooked sausage and onion, tomatoes, spinach and shredded cheese.
Beat eggs and dairy. Add salt and pepper. Pour over everything in the baking dish. Top with crumbled goat cheese. Bake for 50 minutes or until eggs are done through when shaking the dish.
Recipe can be made smaller if a smaller baking dish is used. The baking time may be cut by 10 minutes.
