1 pound (450g) lo mein noodles and 1 tbsp sesame oil
1 tbsp dark soy sauce
2 tbsp light soy sauce
1.5 tbsp oyster sauce
1 tsp rock sugar dissolved in 1 tsp hot water
1 1/2 tsp honey
1/2 tsp five spice powder (optional)
1 tbsp vegetable oil
1 clove garlic, minced
1 cup sliced shiitake
Several green onions, chopped into 2 inch lengths
2 medium carrots, julienned
6-8 bok choy or choy sum, very coarsely chopped
(Optional) 1 lb browned/braised and shredded beef or pork
1 1/2 tbsp Shaoxing wine
Instructions
Boil noodles to al dente (approx. 2 minutes).
Rinse immediately with cold water and toss with
sesame oil. Set aside.
Combine soy, sugar, five spice, honey, and oyster
sauce.
Add oil and heat wok (to high, searing heat).
Add garlic, and let saute for a moment. Then
add mushrooms, carrots, and white bits of
scallion and bok choy. Cook until tender (2-3
minutes). Blend in meat. Hit wok with the
splash of Shaoxing wine. Then toss in all
greens and blend/steam until wilted (2
minutes).
Remove from heat. Add noodles. Blend noodles, meat
, and vegetables in prepped soy sauce. Serve in
bowls, sprinkled lightly with fresh shredded boy
choy leaves.
