     Mexican Rice

Ingredients
1 cup rice
1 yellow onion
2 chicken bouillon cubes, low sodium
1 can tomato sauce
3 1/3 cups frozen vegetables (frozen peas and carrots)
2 cups hot water
 

Instructions
1. Add rice to a saucepan. Cook over medium heat, stirring occasionally, until lightly browned. 2. Stir in onion. Cook for 2-3 minutes. 3. Add hot water, bouillon cubes, and tomato sauce. Stir until bouillon cubes are dissolved. 4. Reduce heat to low. Cover and simmer for 20 minutes.
2. Add frozen vegetables. Cover and simmer for an additional 10 minutes or until all moisture is absorbed.
