25 lg white mushrooms, stems removed, reserved and chopped
2 gloves garlic
1/4 cup white wine
4 oz crumbled blue cheese
3/4 cup panko breadcrumbs
2 TBSP finely chopped fresh parsley

Heat lg skillet over medium heat. Ad EVOO and once hot, add the turkey sausage and cook, breaking up with the back of a wooden spoon, about 2 mins. When brown, add mushroom stems and continue to cook until soft. Add garlic and briefly sauté until fragrant. Stir in white wine and scrap up any brown bits on bottom of pan. Cook until wine has evaporated. Transfer to a bowl.
Add blue cheese, breadcrumbs, and parsley to sautéed mixture and stir to combine.
Place mushroom caps cavity-side up on sheet tray. Drizzle with EVOO and s, p. Spoon the filling into the cavities and drizzle mor EVOO
Bake 20 mins
