     Salmon Croquettes

Ingredients
2 Eggs
3/4 cups Milk
1/4 tsp. Salt
1/4 tsp. Black Pepper
1 (3 oz.) package Manishewitz Potato Pancake Mix
1 (14 ¾ oz.) can Salmon, drained
1 cup finely chopped Onion
2 Tbsps. chopped Parsley
Oil for frying
 

Instructions
Combine eggs, milk, salt and pepper in a small bowl; beat until blended. Stir in potato pancake mix and put aside.
Place salmon in a medium sized bowl. Remove and discard bones and dark skin; mash well. Add onions, parsley and pancake mixture. Mix until thoroughly blended.
Pour 1/8 inch oil into a large frying pan and heat over medium heat. Take a 1/4 cup of the salmon mixture and shape into a 3 inch round patty. Place on a wide metal spatula and lower croquette into hot oil; repeat with remaining mixture. Cook each croquette about 4 minutes on each side, or until browned. Drain on paper towels.
Keep warm in a 300° oven until all are finished.
