Ingredients
1 lb ground beef or italian sausage
1 small diced onion
1 28 oz can tomatoes
1 - 12 oz can tomato paste
1 T. sugar
1 1/2 t. salt (or less)
1/2 t. oregano
1/2 t. thyme
1/2 t. red pepper
 
1/2 t. garlic salt
1 bay leaf
2 beaten eggs
2 cups cottage cheese
1/2 cups parmesan cheese
16 oz shredded mozzeralla
lasagna noodles

Instructions
1. Brown beef and onions, drain. 2. Add tomatoes, paste and spices. Heat to boiling and simmer 30 minutes. Discard bay leaf. 3. Mix (beat) eggs. Mix in cottage cheese and 1/2 cup parmesan cheese. 4. Layer in 9X13 pan or 2 9X9 pans- noodles, meat, cheese mixture, mozzeralla. Usually 3 layers each. 5. Bake at 375 degrees for 45 minutes. Let stand 10 minutes before serving.
