     Cinnamon Ripple Sweet Potato Cake

Ingredients
1/2 cup firmly packed brown sugar
1/2 cup chopped pecans
2 tsp cinnamon, divided
1 cup margarine, softened
2 cups sugar
4 large eggs
1-1/2 cups sour cream
1 cup mashed, cooked sweet potatoes
1 tsp vanilla
 
3 cups flour
2 tsp baking soda
1 tsp salt
1/4 tsp nutmeg

Instructions
Preheat oven to 350 degrees.
Grease and flour a 12-cup Bundt pan. In a small bowl, combine brown sugar, pecans and 1 tsp cinnamon; set aside. In a large bowl, combine margarine, sugar, eggs, sour cream, sweet potatoes and vanilla. Combine dry ingredients, including remaining 1 tsp cinnamon, and stir into mixture.
Pour half of batter into prepared pan. Sprinkle evenly with brown sugar mixture. Spoon remaining batter over streusel.
Bake 1 hour 30 minutes or until a toothpick inserted in the center comes out clean. Cool before serving.
