     Mozzarella and Basil Bites

Ingredients
fresh mozzarella balls, cut in half
1 egg
1 T water
fresh wonton wrappers
1 c warm tomato sauce (jar or fresh)
 

Instructions
Drain the mozzarella on a paper. Whisk the egg and water together with a fork. Wash and dry the basil leaves then cut into thin strips.
On top of one wonton, place a half of a mozzarella ball. Sprinkle basil on top. Brush the outside edge of the wonton with the egg wash, press edges together to form a triangle and tuck ends underneath. Let rest for a few minutes to seal.
To Fry- Heat 1 cup fresh olive oil to 350. Place folded wontons in oil 8-10 at a time. Cook until golden brown on each side, about one minute per side. Drain on paper towels. Sprinkle with grated cheese.
To Bake- Brush outstide of wonton with additional egg wash. Place on cookie sheet lined with parchment and bake at 425 for 17-20 minutes, flipping hallway through baking time. Sprinkle with cheese.
