     Harvest Apple Cake

1 3/4 c all purpose flour
1 c whole wheat flour
1 c sugar
3/4 c firmly packed brown sugar
1tbl. cinnamon
2 tsps baking powder
1 tsp salt
1/2 tsp baking soda
3/4 c vegetable oil
1 tsp vanilla
3 eggs
2 c (2 medium) apples-peeled and finely chopped
3/4 to 1 c chopped nuts
1/2 c powdered sugar
1/4 tsp vanilla
2-3 tsp milk

Preheat oven to 325. Generously grease (using at least 1 tbl solid shortening) and flour 12c Bundt pan. In large bowl, blend all cake ingredients except apples and nuts. Beat 3 minutes at medium speed. BY HAND, stir in apples and nuts. Bake 50 to 65 minutes, until toothpick inserted in center comes out clean. Cool upright in pan 15 minutes. Turn out onto rack to cool completely.
When cool, combine powdered sugar, milk and vanilla in small bowl to make glaze. Transfer cooled cake to serving platter and drizzle with glaze.
