Place 4 mint tea bags into heat-proof container and
pour in 2 c boiling water and honey/agave, Stir
well to combine and allow to steep for 15 minutes.
Remove tea bags and cool tea over ice bath or chill
in refrigerator.
After tea has cooled to room temperature or colder,
pour into pitcher. Add mint leaves and muddle with
blunt edge of wooden spoon. Add orange juice, rum
and rose water and stir well.
Wet rims of 6 old fashioned style glasses with
orange juice. In small, shallow bowl, combine
crushed rose petals, dried mint and vanilla sugar
and mix to evenly distribute. Press wetted rims
of glasses into rose/sugar/mint mixture to rim
glasses.
Fill glasses 1/3 way with ice cubes and pour
tea/rum/orange mixture to 2/3 full. Top with
sparkling seltzer to add fizz if desired.
For mocktail version, omit rum and add in extra
seltzer water.
