Whisk vinegar with salt, pepper and mustard; add oil gradually while whisking. When thickened, add other spices. Blend thoroughly. Cover and refrigerate for as long as 3 days.
Marinade overnight and grill to medium rare 3 minutes per side on breasts; let rest; slice thin.
