     Cheesecake The Palce

butter - 1/4 lb
graham cracker crumbs - 2 cups
white chocolate - 1oz grated
sugar - 1/4 cup
cream cheese - 2 lbs (four 8oz packages)
sugar - 1 1/4 cup
Cassis - 3 tbls blackberry liquer
salt - pinch
eggs - 4 large
white chocolate - 3oz shaved or sliced thin
sour cream - 2 cups
sugar - 1/4/cup
almond extract - 1 tsp

Melt butter over low heat, combine crumbs, white chocolate, and sugar until well blended. Press mixture over the bottom of an ungreased 10 spring form pan. With mixer combine cream cheese, and sugar beat 2 minutes until soft. Add Cassis and salt. Blend thoroughly. Add eggs one at a time, keeping mixer at lowers speed to prevent too much air form getting into the batter. Add shaved white chocolate and fold on lowers speed. Pour into crust and bake 40 minutes in a preheated 350F oven.
Remove cake from oven and let stand 10 minutes while preparing topping. Combine sugar, sour cream and extract. Spread over top of cake and bake at 350F for 10 minutes. Remove and refrigerate immediately.
