     "Raw" Pumpkin Pie

Preptime   night before

2 cups pecans, soaked overnight, rinsed, then dehydrated until crunchy (about 12 hours)
1/2 cup dates, soaked for 20 minutes
2 cups peeled, seeded, chopped pumpkin meat
1 cup dates, soaked for 20 minutes
1/2 cup coconut butter
2 teaspoons cinnamon
1 teaspoon fresh grated gingerroot
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
1/4 cup apple juice

To make crust: Combine the pecans and 1/2 cup dates in a food processor and pulse until evenly ground and mixed. Press the mixture into a glass pie plate or individual tart molds.
To make the filling: Combine remaining ingredients into food processor and puree.
To finish: Spoon the filling into the crust and serve.
