     Peanut Sauce with ginger/coconut milk

Ingredients
1 cup smooth peanut butter
1/2 cup coconut milk
2 cloves garlic
2 inch piece fresh ginger, peeled and sliced thin
1/4 cup soy sauce
2 tablespoons of brown sugar
2 tablespoons fresh lime juice
1/2 teaspoon crushed red pepper
 

Instructions
Put coconut milk, soy sauce, ginger, and garlic in blender. Puree until smooth. Add remaining ingredients and blend on low speed until well combined. Adjust seasoning to taste. Add water if needed to thin sauce to correct consistency for dipping.

For dipping summer rolls or sate
