     Ham and Cheese Finger Sandwiches

Ingredients
1/2 cup water
3 tbsp cider vinegar
1 1/2 tbsp brown sugar
1/2 small red onion, very thinly sliced
8 slices thin white bread (Pepperidge Farm)
Olive oil
2 small green apples
4 to 6 oz gouda
1 tbsp Dijon mustard
 
1/2 bunch watercress
8 thin slices ham/prosciutto
Freshly cracked black pepper

Instructions
Bring water, vinegar, and brown sugar to a boil. Add the onions and remove from heat. Cover and set until room temperature.
Trim the crusts off the bread and cut into thirds. Brush both sides with olive oil and lay on baking sheet. Toast in oven at 400 degrees until crisp and lightly brown (about 5 min).
Quarter, core, and thinly slice apple. Slice cheese into pieces that will fit onto the bread.
Place a small amount of mustard on bread. Place apple, cheese, and a sprig of watercress on each piece of bread. Wrap ham around each piece. Top with onion. Drizzle with olive oil and black pepper. Serve at room temperature.
