1.5 lbs butternut squash-cubed (can buy in produce)
2 T olive oil
1 T real maple syrup (not pancake syrup)
salt and pepper
3/4 c apple cider
2 T apple cider vinegar
2 t shallots
1/2 c olicve oil
2 tsp mustard
1/2 tsp salt`1/4 tsp pepper
arugula salad and walntus
Instructions
cook first set of ingredients at 450 degrees for 15 min on a cookie sheet..turn once.
Boil and bring to reduction the apple cider 3 ingredients then remove from the heat and cool Whisk in the olive oil mustard and salt pepper.
Mix the squash and the dressing adding some dried cranberries and walnuts and then toss with the salad mix. I use a fall mix but it calls for arugula.
