Put sugar syrup and 1/2 cream in a kettle and stir until it boils stirring constantly. then add remaining cream slowly so that it doesn't stop boiling add the chunk of butter and cook until it reaches a chewy ball stage on the candy thermometer. Remove from the heat add the vanilla and nuts then pour in a buttered cookie sheet that has sides. let stand overnight and then cut into squares and wrap in waxed paper.
