Preheat oven to 350. In a large bowl, cream
butter and sugar until light and fluffy. Add
eggs, one at a time, beating well after each
addition. Beat in bananas, eggnog, and vanilla.
In another bowl, whisk flour, baking powder, 1/4
tsp nutmeg, salt, and baking soda. Gradually beat
into the banana mixture.
Transfer to a greased 9x5 inch loaf pan. Sprinkle
with remaining nutmeg.
Baking 50-60 minutes or until a toothpick inserted
in center comes out clean. Cool in pan 10 minutes
before removing to a wire rack to cool.
