     Chicken soup

Ingredients
1 Tbsp olive oil
2 celery stocks
1 medium onion
3-4 medium carrots, sliced
1 small rotisserie chicken, meat removed and diced/shredded
1 (64 oz) can of chicken broth
1 chicken bouillon cube OR 1 Tbsp granules
Optional- 1 lg potatoe, diced; 1 can green breans, drained
 

Instructions
In a large pot, add olive oil and onions. Cook for about 10 minutes or until tender. Add remaining vegetables, bouillon cube, and enough broth to cover vegetables. Boil for about 15 minutes or until vegetables are tender. Add remaining broth. Add chicken to the soup, stir well. Set soup on low until ready to eat.
Serving Suggestions
Serve with dumplings or noodles
