Wash and sort beans Place in large kettle, cover with water, add 2 tsp salt and soak overnight. In morning, drain add 2 quarts of water, some ham and bring to a boil, then simmer slowly for 2-1/2 hours - 3 hours. Add remaining ingredients and salt & pepper to taste (not hot sauce - individually add to bowl). Simmer another 30 minutes or so.
