Wash spinach, remove stems and wrap in towel and chill.
Combine dressing ingredients to a large lidded jar and shake
until thoroughly mixed, chill.
At serving time mix spinach, crumbled bacon and sliced
mushrooms in a large salad bowl. Pour dressing over
ingredients and toss to coat. Place the sliced eggs and
onions on top of salad and serve
