     Coconut Sheet Cake

Ingredients
2 c flour
1 1/2 c sugar
2 eggs slightly beaten
1 1/2 t baking soda
1/2 c vegetable oil
1/4 t salt
1 t vanilla
1 20 oz can crushed pineapple, juice included
 
Icing
1/2 c sugar
1 stick of butter
1/2 c chopped pecans
1 5 oz can evaporated milk
1 t vanilla
1 3 1/2 oz can coconut

Instructions
Preheat oven to 350. Combine flour, sugar, eggs, baking soda, oil, salt, vanilla, and pineapple with juice. Pour batter in greased and floured 13x9 pan. bake 30 -35 minutes. Remove cake from oven, let set 5 minutes, then use toothpick to poke holes all over the top. Prepare icing and pour over warm cake so icing will soak in. For Icing combine all ingredients in saucepan, cook over low heat until mixture begins to thicken stirring frequently
