     Endive Boats

Ingredients
1 T olive oil
1 and 1/2 cups finely chopped red bartlett or anjou pear
1 T. honey
1/8 t. kosher salt
1/8 t. black pepper
2 oz gorgonzola (blue) cheese, crumbled
16 Belgian endive leaves (3 heads)
1/4 cup chopped walnuts, toasted
 

Instructions
1. Heat a medium skillet over medium heat. Add oil to pan, swirl to coat. Add pear; cook 2 minutes or until softened, stirring occasionally. Remove from heat and stir in honey. Cool 3 minutes; stir in salt, pepper and cheese. Spoon about 2 t. pear mixture into each leaf, sprinkle with walnuts
